Hello @polymathical,
Thank you for you asking your question here on the StarTech.com community page.
I have reviewed our documentation for the USB3HDCAP, and what I found seems to validate what you have discovered. The audio input for the USB3HDCAP is integrated with the video. This means the audio can be captured with software like OBS which can read the integrated video and audio, and separate them, but the audio device is not available separate from the video.
Though you do not have an urgent need, I will add for your interest, we do have separate USB audio devices, and USB capture devices that will provide a separate audio device accessible in Windows.
- StarTech.com USB Audio Adapters - https://www.startech.com/en-us/cards-adapters/sound/usb-audio
Two video adapters with separate audio interfaces.

- SVID2USB232 - https://www.startech.com/en-us/audio-video-products/SVID2USB232
I hope that helps!
Please let us know if there is anything else we can do to help with the USB3HDCAP or any of these other devices.
Sincerely,
